MINESTRONE SOUP

A yummy, nutritious soup perfect for a cold night!

Great idea to clean out any left over vegies.

2 organic Onions
3-4 organic Carrots
Handful organic green beans
3-4 organic potato or sweet potato
1-2 Sticks organic Celery
2 organic Zucchini
1-2 Large organic cloves garlic
250g organic Cabbage
(any other vegies you want to add!)
150g Casalare Vegie alphabet pasta.

1 x 680g organic tomato puree + 1 tbs organic tomato paste OR 2 x tins organic diced tomato
5 cups water + Braggs seasoning OR 5 cups vegetable stock
1 x tin organic Cannellini beans
Himalayan crystal salt to taste

Finely chop or dice all vegetables and shred cabbage.  Brown onions and garlic in oil in a large saucepan, add carrots then potato, celery, zucchini, beans and cabbage.
Add water/stock and tomato puree.
Bring to the boil, reduce heat and simmer for 1.5-2 hours.
Add cannellini beans and pasta during the last 30 minutes.
Add more liquid if needed.

SERVE WITH YOUR FAVOURITE SOL BREAD AND SHAVINGS OF PECORINO CHEESE - YUMMY!!


If your short on time just pop all ingredients in the slow cooker in the morning and when
 you get home dinner will be waiting.
